Momos are similar to Chinese jiaozi or dimsum and Japanese gyoza. They may be steamed, fried or cooked in soup. This soup makes a healthy and filling meal when served with momos.
1 kg of pork bones 1 carrot 2 large onions 2-3 bay leaves 1 teaspoon of vinegar 4-5 peppercorns Pinch of pepper powder Salt to taste Water as required
Wash the bones thoroughly. Rub in the salt. Add the vinegar, 6 cups of water. Let the bones soak for 30 minutes.
Rinse the water off the bone. Place it in a pot of boiling water. Let it simmer for 12-15 minutes. Remove from heat, and strain the water.
Add the chopped onions, carrots, bay leaves, bones and whole peppers into another pot of boiling water. Cover the pot and simmer for 3 hours.
Strain off the water in a different pot. Sprinkle with spring onions and pepper powder. Serve momo soup with momos on the side.
