Lahsun ki chutney is a spicy Indian garlic-based condiment made with red chillies and garlic. Popular in Rajasthan and Maharashtra, it adds heat and flavour to meals such as parathas, dal-rice, or vada pav.
12 to 15 garlic cloves 4 to 5 dry red chillies (adjust to taste) 1 tomato ½ tsp cumin seeds Salt to taste 2 tbsp oil 1 tsp lemon juice
Soak the dry red chillies in hot water for 10–15 minutes (helps soften and blend easily).
In a blender, add soaked chillies, garlic, tomato, cumin seeds, salt and blend into a smooth paste.
Heat oil in a pan, then add the chutney and sauté for 2-3 minutes over a low flame to enhance flavour and extend shelf life.
Once cooled, mix in lemon juice for a hint of freshness.
