With the onset of winter, your minds are directly transported to the delicious dishes you will get to relish. One such flavourful culinary marvel that the Udupi cuisine of South India has in store is kashi halwa. It is made with ash gourd, oodles of ghee and dry fruits.
500 grams of peeled ash gourd 4 tablespoons of ghee 1 cup of sugar ½ teaspoon of cardamom powder 1-5 saffron strands, soaked Dry fruits, as preferred, chopped
Peel and grate the ash gourd, removing the seeds and inner pulp.
Heat the ghee in a pan. Add the grated ash gourd. Cook on medium heat until it softens.
Add sugar, cardamom powder, and saffron strands to the pan. Mix well and cook until the sugar dissolves.
Let the mixture thicken. Remove from the heat. Garnish with chopped dry fruits as needed.
Serve warm kashi halwa as a dessert or a sweet treat.
