How To Make Soft, Spongy & Sugar-Infused Rasgulla, A Beloved Mishti From Bengal

Rasgulla is a popular sweet from East India, especially West Bengal, that is widely savoured in all parts of the country. If you’ve been craving this mishti for a long time, here is an easy recipe to try!

Ingredients

1 tsp refined flour 1 litre of milk 1 cup of sugar 1 lemon 1-3 cardamoms 4 cups of water

Step 1

Pour a litre of milk into a deep pan and bring to a soft boil. Squeeze the lemon in it to promote the curdling of solids.

Step 2

Stir the concoction before turning off the flame. When the milk starts curdling, turn off the heat. Cool it off for 10-15 minutes.

Step 3

Lay a clean muslin cloth over a pan and pour the milk solids and liquid on it. Strain the residue.

Step 4

Wash the solids with fresh water to get rid of the sourness from the lemon juice. Mix the solids on a surface with all-purpose flour.

Step 5

Keep kneading the ingredients until you have a binding mixture. Make small balls with this dough. Prepare sugar syrup.

Step 6

Add cardamom pods and slowly fold in chhena balls into the sugar syrup and cover with a lid for 5 minutes.

Step 7

Remove the lid and let the chhena cook for 10 minutes. Turn off the heat and let the chhena balls cool off. Serve!
