How To Make Soft And Fluffy Vegetable Idli

Vegetable idli is a wholesome South Indian breakfast made with fermented batter and fresh vegetables. This dish is perfect for kids and adults alike, for all meals. Make soft and fluffy vegetable idlis with the following steps.

Ingredients

2 cups Idli batter ½ cup Grated carrots ½ cup chopped beans & capsicum ¼ cup (optional) green peas 2 tbsp coriander leaves Salt as needed Oil/ghee for greasing moulds

Step 1

Wash, chop, and lightly steam vegetables like carrots, beans, peas, and capsicum for a few minutes until just tender.

Step 2

Add the steamed vegetables and coriander leaves to the idli batter. Adjust salt if needed.

Step 3

Grease idli moulds with oil or ghee. Pour the vegetable-batter mixture into each mould until ¾ full.

Step 4

Steam in an idli cooker or steamer for 10-12 minutes or until a toothpick comes out clean.

Step 5

Demould gently and serve hot with coconut chutney, sambar, or spicy podi. Perfect for breakfast, lunch or dinner, and for tiffin!
