Soan papdi, synonymous with Diwali, is a traditional Indian sweet. But you don’t have to wait for another year to enjoy the flaky mithai. Try this step-by-step recipe and make soan papdi in your kitchen.
1 cup besan 1 cup maida 1 cup ghee 1½ cups sugar ½ cup water 1 tsp cardamom powder 2 tbsp chopped pistachios and almonds
Heat some ghee and dry roast besan and maida. Once aromatic, turn off the flame and set aside.
Take another pan and make chashni by heating water and sugar.
Once you get two-thread consistency, mix the sugar syrup with the roasted flours.
Spread the mixture on a greased plate, garnish with chopped pistachios and almonds.
Flatten the mixture and let it cool. Cut into squares and serve the homemade soan papdi.
