Sabudana vada, made with boiled potatoes and soaked tapioca pearls, is a great evening snack. While traditionally deep-fried, you can make sabudana vada oil-free by air frying the mixture.
1 cup sabudana 2 boiled potatoes 1/2 cup roasted peanuts 2-3 green chillies 1 inch of ginger 1 tablespoon lemon juice 1/4 cup chopped coriander leaves 1 teaspoon cumin seeds Rock salt to taste Oil for frying
Rinse and soak sabudana till soft. Drain excess water.
Mix sabudana with potatoes, peanuts, chillies, ginger, lemon juice, cumin, coriander, and salt.
Take small portions of the mixture and shape them into patties.
Preheat your air fryer, then air-fry the vadas until crispy. Serve hot.
