Sabudana Khichdi is a popular Indian dish made with soaked tapioca pearls or sabudana, peanuts, and mild spices. Light, non-greasy, and energy-rich, it’s commonly enjoyed during fasting (vrat) and as a quick breakfast or snack.
1 cup sabudana soaked 5-6 hours 2 boiled & diced potatoes ¼ cup roasted, coarsely crushed peanuts 2 tbsp ghee or oil 2 finely chopped green chillies 1 tsp cumin seeds 5-6 curry leaves Salt to taste 1 tsp lemon juice 2 tbsp chopped fresh coriander
Rinse soaked sabudana until starch washes out and drain the water.
Heat ghee, add cumin seeds, green chillies, and curry leaves.
Add diced potatoes, then sauté till they turn golden.
Add sabudana, crushed peanuts, salt and cook on low flame for 5-7 minutes until pearls turn translucent.
Finish with lemon juice and coriander, then serve hot.
