This rich and velvety mushroom soup is pure comfort in a bowl. It’s creamy, hearty, and full of earthy flavour, making it the perfect meal for chilly evenings or a simple dinner starter.
2 cups mushrooms (sliced) 1 onion (chopped) 1 tbsp butter or olive oil 1 tbsp flour 2 cups milk or vegetable stock Salt and pepper to taste
Heat butter in a pan and sauté the chopped onion until soft and fragrant.
Add sliced mushrooms and cook until they turn golden and release their juices.
Stir in flour and slowly add milk or stock, whisking to prevent lumps.
Simmer until creamy, season with salt and pepper, and blend smooth before serving hot.
