The churma is usually served alongside the popular Rajasthani dish dal-baati. Hence, it is called dal-baati churma. This delicacy not only satisfies the sweet appetite but also gives the spirit of Rajasthan's food culture.
Cooked panchmel dal 1 cup wheat flour 1½ tbsp ghee ½ tsp Salt 4 tbsp water 1 tbsp ghee 2 baati crushed into a coarse powder 2 tbsp chopped almonds ¼ tsp cardamom powder 2 tbsp powdered sugar
In a bowl of wheat flour, add ghee and salt. Mix till the texture of the flour resembles bread-crumbs. Add a little water and knead it into a dough.
Once the dough is ready, divide it into portions. Then make a cross sign on the dough ball.
Bake the baatis on a gas burner, keep flipping them and ensure that they don't burn.
Crush a few baatis and transfer them to a grinder jar. Crush it into a coarse powder. Then heat a pan, add ghee, cardamom pods, and chopped almonds.
Sauté them till it's nice and fragrant. Add crushed baatis. Sauté them on a medium flame for 5 minutes.
Now allow the mixture to cool down. Add powdered sugar. Mix them well. Assemble your dal-baati churma and enjoy!
