Adai dosa is a healthy South Indian breakfast that is prepared with mixed lentils and rice. It is quick and perfect for busy mornings and can be prepared perfectly with chutney or butter.
½ cup raw rice ¼ cup chana dal ¼ cup toor dal 2 tbsp urad dal 2 dried red chillies 1 tsp cumin seeds 1 small onion, finely chopped 2 tbsp chopped coriander leaves ½ tsp salt 2–3 tbsp oil for cooking Water as needed
In a bowl, soak rice, chana dal, toor dal, and urad dal with some dried red chillies in water for about 2 hours.
Drain the soaked ingredients and then grind with a little water to make a slightly coarse batter. Add cumin seeds and salt as well while grinding.
Transfer the batter to a bowl and to it add finely chopped onion and coriander leaves for some crunch and freshness.
Heat a dosa pan or tawa on medium flame and lightly grease with a few drops of oil so that while cooking the dosa, it doesn’t stick and gets cooked evenly.
Pour a ladleful of batter and gently spread to make a thick dosa. Drizzle 1 teaspoon of oil around the edges to get crispiness.
Cook until the dosa turns golden and crisp from both sides and serve hot with coconut chutney, jaggery, or butter for a filling breakfast.
