Most salads may feel light, but they don’t keep you full for too long. This quick paneer salad recipe gives protein, required freshness, as well as flavour, without any complicated dressing or cooking time needed.
200 g paneer cubes ½ cup chopped cucumber ½ cup chopped tomato ¼ cup onion, chopped 2 tbsp lemon juice 1 tbsp olive oil ½ tsp black pepper ½ tsp rock salt 1 tbsp chopped coriander
Cut 200g paneer into bite-sized cubes so that each piece holds the dressing well and doesn’t get crushed while mixing.
In a mixing bowl, add ½ cup of cucumber, ½ cup of tomato, and ¼ cup of onion to make the base of the salad.
Drizzle 2 tablespoons of lemon juice on top for tang and add freshness. It will lightly marinate the paneer without requiring any extra sauces.
Add 1 tbsp olive oil to coat the paneer. This will make the salad glossy and give it a smooth texture without being too heavy.
Sprinkle ½ tsp pepper, ½ tsp rock salt, and gently toss everything to let the flavours meld.
Garnish with 1 tablespoon of coriander and let the flavours settle in the refrigerator for about 5-10 minutes, then serve.
