Sabudana khichdi is a comforting and light dish that is ideal not only for fasting days, but also as a nutritious breakfast. Adding some crunchy peanuts and mild spices makes it a flavourful meal without being too heavy on the stomach.
1 cup sabudana ½ cup peanuts 2 tbsp ghee 1 tsp jeera 2 green chillies 1 medium potato (boiled, cubed) ½ tsp rock salt 1 tbsp lemon juice 1 tbsp coriander
Wash 1 cup of sabudana thoroughly in water and soak for about 2-2 hours until the pearls turn soft and separate from water without sticking.
In a pan, dry-roast ½ cup of peanuts. Let them cool completely, then grind coarsely and mix in the soaked sabudana to coat every pearl evenly.
In the same pan, heat 2 tablespoons of ghee, 1 teaspoon of jeera, and 2 chopped green chillies. Let everything release its aroma without browning the spices.
To this, add 1 cubed boiled potato. Sauté it gently so the edges turn slightly crisp but remain soft on the inside.
Once all of this is cooked nicely, add sabudana and peanuts. Mix it nicely and sprinkle ½ tsp of rock salt.
Garnish with some lemon juice and coriander. Cover for two minutes so that the flavours settle. Serve hot by pairing with curd.
