Oatmeal cookies have a huge fan base because they feel nostalgic, comforting and timeless, yet they are surprisingly tricky to get right. People relish their soft-chewy balance which can further be enhanced with chocolate chips, nuts or dried berries.
1 cup rolled oats 1 cup all purpose flour ½ cup sugar ½ cup brown sugar ½ cup butter softened 1 egg ½ teaspoon baking powder ½ teaspoon cinnamon Pinch of salt
Mix the brown sugar, sugar and butter together until smooth.
Mix in the egg until everything is mixed together.
Put in the salt, cinnamon, baking powder and flour.
Add oats to the cookie dough to make it thick.
Scoop small amounts, put them on a tray, and bake them for 12 minutes at 175°C.
