Moonglet is a fluffy, vegan omelette made from moong dal batter and vegetables. It’s rich in protein, light to eat, and a healthy choice for breakfast or snacks.
1 cup moong dal (soaked for 3–4 hours) ½ onion (chopped) ½ tomato (chopped) 1 green chilli (chopped) Salt and spices to taste Oil for cooking
Blend soaked moong dal into a smooth, thick batter with a little water.
Mix in onion, tomato, chilli, salt, and spices for flavour.
Heat oil in a pan, pour the batter thickly, and cook on medium flame.
Flip gently, cook both sides until golden brown, and serve hot.
