Moong dal khichdi is the OG one-pot meal when you’re feeling homesick or having digestive distress. Made with rice, lentils, and minimal spices, it’s the perfect dinner option. Here’s how to make it in a pressure cooker.
1 cup split moong dal 1 cup rice 3 tablespoons ghee 1/2 teaspoon cumin seeds 1/2 teaspoon mustard seeds 1/4 teaspoon hing 1 tablespoon ginger 1/2 tablespoon garlic 1/2 teaspoon turmeric 1 teaspoon black peppercorns Salt to taste 2.5 cups water Coriander leaves (for garnish)
Rinse and soak moong dal and rice for about 30 minutes.
Heat the ghee and prepare the tadka by adding cumin seeds, mustard seeds, and hing.
Add grated ginger, minced garlic, turmeric, and black peppercorns, and saute.
Add the tadka with the soaked rice and dal to a pressure cooker. Season with salt.
Pour in water, close the lid, and cook for 4-5 whistles on a medium flame.
Garnish with chopped coriander leaves and some ghee, and serve with papad and dahi.
