If you often resort to making the one-pot meal, pulao, try replacing rice with mixed millets. Add seasonal vegetables with soaked millets, pressure-cook, and the millet pulao will be ready in under 15 minutes.
1 cup mixed millets 2 tablespoons oil 1 onion 1 tomato 1 green chilli 1 inch of ginger 2 cloves of garlic 1 teaspoon cumin seeds 1 bay leaf 2 cardamoms 1 cinnamon stick 1 teaspoon garam masala 1/2 teaspoon turmeric powder 1/4 teaspoon red chilli powder 1/4 cup coriander leaves Salt to taste
Rinse the mixed millet and soak for half an hour. Drain and keep aside.
Heat some oil and saute cumin seeds, bay leaf, cardamom, and cinnamon stick.
Add chopped onion, ginger and garlic. Mix in tomatoes and cook till they are soft.
Stir in turmeric powder, red chilli powder, and garam masala.
Add mixed vegetables like peas, carrots, and cauliflower. Pour some water and boil.
Add the millets and simmer for about 20 minutes. Garnish with coriander leaves and serve.
