 Making mayonnaise at home without eggs is easier than you believe. With this simple and quick recipe, you can have a smooth, creamy spread that is perfect to use for sandwiches, dips, and salads.

Ingredients

½ cup milk 1 cup oil (neutral, like sunflower) 1 tsp vinegar or lemon juice 1 tsp sugar ½ tsp salt ½ tsp mustard paste or powder

Step 1

In a glass jar or bowl, add milk, salt, sugar, and some mustard. Make sure the milk is at room temperature so it blends more easily and has a smooth consistency.

Step 2

To this, pour the oil slowly into the jar in the milk mixture. Do not stir it yet, as the layer will help in achieving the correct consistency.

Step 3

Put a hand blender at the bottom of the jar and blend slowly, without moving it much, to let the mixture emulsify properly.

Step 4

As the mixture begins to thicken, slowly move the blender upward to mix everything evenly.

Step 5

Now, add vinegar or lemon juice and blend again for a short span. This will add a bit of tanginess and will balance the flavour of the mayonnaise.

Step 6

Taste and adjust the seasoning if required, and transfer the mayonnaise to a clean jar. Keep it in the refrigerator and use it whenever required.
