Celebrate Christmas with marshmallows, the soft, airy, and melt-in-the-mouth treats. Perfect for hot chocolate, desserts, or snacking, these homemade treats bring a cloud-like texture and elevate simple moments into delightful, fluffy indulgence.
1 cup sugar ½ cup water (divided) ¼ cup corn syrup/liquid glucose 2 tbsp gelatin 1 tsp vanilla extract ½ cup powdered sugar (for coating)
Add 2 tbsp gelatin to ¼ cup warm water, and allow it to bloom for 5-7 minutes, until spongy.
Heat 1 cup sugar, ¼ cup corn syrup, and ¼ cup water in a saucepan until it reaches 115°C (soft-ball stage).
Pour the hot syrup into a mixing bowl and begin whipping while slowly adding the bloomed gelatin.
Beat the mixture for 8-10 minutes until thick, pale, glossy, and tripled in volume; stir in vanilla.
Spread into a greased tray, let it set fully, coat with powdered sugar, slice into cubes, and store airtight.
