Have you ever tried mangoes with rice? It is a unique sweet and salty combination cherished in Thailand and Filipinos a lot. With this easy recipe, you can make it at home and enjoy the fruit in a non-traditional way.
2 ripe mangoes 1.5 cups full-fat coconut milk 1 cup rice Salt to taste 2 tsp water Toasted coconut 1 tsp cornstarch 4-6 tbsp sugar
Wash the rice a couple of times and soak it overnight or even 24 hours.
Drain the rice and steam it for at least 25 minutes. Meanwhile, heat a cup of coconut milk in a large pan.
Once milk boils, add rice to it, and let the blend thicken. Turn off the heat.
In another pan, heat ½ a cup of coconut milk and dissolve sugar in it. Add salt and cornstarch slurry to thicken the sauce.
Serve sliced mangoes with sticky rice. Top the blend with coconut sauce.
Garnish the dish with toasted coconut and sesame seeds. Enjoy!
