Lauki chana dal is a wholesome North Indian dish which combines mild and earthy flavours of the various ingredients. This dish is high in protein and is a perfect accompaniment to steamed rice or warm rotis.
1 cup chana dal 1 peeled and diced lauki 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds 1 chopped onion 2 chopped green chillies 1 tsp ginger-garlic paste ½ tsp turmeric powder 1 tsp coriander powder 1 tsp garam masala Salt to taste Fresh coriander for garnish
Wash and soak the chana dal for 1 hour, then drain the water.
Heat oil, add mustard seeds, cumin seeds, let them splutter, then saute onions, green chilli, and ginger garlic paste.
Add turmeric, coriander powder, chana dal and stir for 2 minutes.
Add lauki, salt, 3 cups of water, cover it and let it cook for about 40 minutes until dal and lauki are tender.
Sprinkle garam masala and garnish it with coriander.
