Kolkata’s street food is a diverse palette of many dishes. Among them is the simple yet mouth-watering jhalmuri, or a puffed rice mix. The ingredients used are not fancy at all, and that’s what makes it so special.
30g muri or puffed rice 25g chanachur 15g plain bhujiya ½ tsp bhaja moshla ¼ tsp beat noon or black salt 15g boiled yellow peas 10g whole Bengal gram 2 green chillies ¼ tsp ginger 25g boiled potatoes 8g chopped coconut ¼ tsp green chilli paste 1 tbsp of mango pickle oil
½ tsp mustard oil 15g chopped onions 10g chopped tomatoes Lemon juice, as needed
Cut the onion, green chillies, and ginger. Dice the tomatoes and remove the pulp inside; otherwise, the muri would become mushy.
Chop coconut. Make a paste of green chillies. Place muri in a large mixing bowl. Combine chanachur and bhujiya.
Add bhaja moshla and black salt. Combine boiled yellow peas)with uncooked, whole Bengal gram. Add green chillies and ginger.
Add the boiling and diced potatoes. Include coconut. Add the dry(ish) ingredients first, so the muri does not become soggy.
Now add the green chilli paste. Drizzle with oil from green mango pickle and raw mustard oil.
Add onions, tomatoes, and a splash of lime juice. Serve!
