In Karnataka, vangi bath is best known as a brinjal-based rice meal. The recipe is very easy and the meal can be cooked for lunch in minutes. If you’ve wanted to cook up a dish that’s different, here’s an easy vangi bath recipe.
1 cup cooked rice 4 brinjals, thinly sliced 1 small capsicum, thinly sliced 1 small onion, thinly sliced 2-3 tbsp vangi bath masala powder Tamarind, soaked Lemon juice, as needed 2 tbsp grated coconut ½ tsp mustard 1 tsp chana dal A handful of cashews A handful of curry leaves ¼ tsp turmeric powder Coriander leaves, for garnish Oil, as needed
Keep brinjals submerged in water to prevent discolouration. In a kadai or pan, heat the oil.
Add the mustard, lentils, and ground cashews. Once they start to splutter, add the curry leaves, sliced brinjals, and onion.
Sauté for 2-3 mins . Next, add the diced capsicum, some salt, and turmeric. Sauté for 2-3 minutes more.
Add the tamarind water, salt, vangi bath powder, and a little water. Combine, cover, and cook until the brinjal is tender.
Finally, add the grated coconut and gently combine. Turn off the flame. Add cooked rice with the vangi bath masala.
Drizzle lemon juice and salt, and stir thoroughly. Serve!
