For a quick breakfast idea before the Monday blues hit, try this lauki rava dosa recipe that is nutritious and crispy. It is cooked by combining fresh bottle gourd or lauki with semolina, rice flour, and spices.

Ingredients

½ bottle gourd 1 ½ cup rice flour ½ cup rava or sooji ¾ tsp water 4 cup water 1 onion, finely chopped 2 chilli finely chopped 1 tsp cumin Oil, for roasting

Step 1

First, peel the skin of the lauki and chop it into pieces. Make certain to remove the seeds as well.

Step 2

Blend the bottle gourd into a smooth paste. Transfer the bottle gourd paste to a large basin.

Step 3

Combine 1½ cups rice flour, ½ cup rava, and ¾ teaspoon salt. Pour in 4 cups of water and whisk to combine.

Step 4

Add 1 onion, 2 tablespoons coriander, 2 chillies, 1 teaspoon cumin, and 2 tablespoons coriander.

Step 5

Mix thoroughly and set aside for 10 minutes to allow the rava to soak completely.

Step 6

When the pan is really hot, pour the batter over it. Spread 1 tsp oil and roast for 2 minutes, or until the dosa is crisp.

Step 7

Finally, enjoy the crispy lauki dosa with chutney.
