Idli without rice seems impossible, but you can still achieve success in making South Indian rice cakes. The only trick to this is if you are eliminating rice, you must add more lentils. You can also temper the batter to prepare masala idli.
2 cups dhuli moong dal 1 cup urad dal ¾ tsp salt ½ tsp fenugreek seeds
Soak methi seeds for a few hours with moong dal and urad dal.
Blend the ingredients into a smooth paste. Add curd into the blend and keep it aside.
Once the batter ferments, it will thicken.
You can temper it with roasted chana dal, moong dal, turmeric, mustard seeds, and curry leaves.
Pour the batter into idli moulds and cook for 20 minutes.
Serve lentil idli with chutney.
