Making idlis can be effortless. But if you’re a beginner or something seems off with the batter, follow these tips and get soft and fluffy idlis every time. Pair the idlis with sambar and nariyal chutney, and enjoy!
Short-grain rice is perfect for making idlis. The regular rice can make denser and drier idlis.
Soak the rice for 4-6 hours and the dal for at least 3 hours. This helps you achieve a smoother batter that will also ferment more effectively.
Fenugreek seeds or methi dana help the batter to ferment and make the idlis softer.
The secret to fluffy idlis is the grainy texture of rice. So, don’t grind the rice too fine.
Once the batter is ready, it is recommended that you ferment it overnight, or for at least 8 hours in a warm spot.
