The traditional Onam Sadya is the heart of the harvest festival. To make the most of authentic Kerala flavours in your spread, you must make idiyappam. Here’s a quick recipe for beginners.
2 cups rice flour 1 cup hot water 1/4 teaspoon salt Coconut milk gravy
Mix rice flour, salt, and hot water. Stir to make a soft dough.
Take a small portion of the dough and stuff it into the cylindrical holes of the idiyappam pot.
Press the dough down firmly to ensure it fills the holes evenly.
Boil some water and place the idiyappam pot over it. Steam till it is fluffy.
Remove the pot from the steamer and unmold the noodles. Serve with coconut milk gravy.
