How To Make Homemade Buckwheat Noodles For Japanese Style Soba

Also called soba noodles, these Japanese noodles are made from buckwheat. These noodles are thin, and they impart a slightly nutty flavour with a smooth texture. It is typically used in dishes that are satisfying and keep you full for longer.

Ingredients

½ cup of buckwheat flour ½ cup of all-purpose flour Hot water as needed ½ mango slices 3 chopped spring onions 1 tablespoon of garlic oil 1 teaspoon of toasted sesame oil ½ lime, cut into wedges 1-2 teaspoons of buckwheat starch

Step 1

In a mixing bowl, add the buckwheat flour and all-purpose flour. Start mixing it.

Step 2

Add the water gradually.  Knead the mixture into a dough.

Step 3

Turn it out onto the counter and begin kneading with your hands.  Shape the dough into a flat rectangular shape.

Step 4

Sprinkle the starch on top. Roll out the dough from the centre, outwards. Fold the dough.

Step 5

Coat with starch on both sides. Begin to trim into noodles of half a centimetre. Toss the trimmed noodles with more starch.

Step 6

Boil water in a large pot. Salt the water as needed. Put in the buckwheat noodles.

Step 7

Cook noodles for 1 minute. Drain the water. Let it cool under cold water. Toss noodles in garlic oil, toasted sesame oil and soy sauce.

Step 8

Serve buckwheat noodles with your choice of soup base or broth base and side dishes.
