Bring the flavours of Gujarat to your plate with this sweet, spicy, tangy Dabeli recipe. Soft pavs filled with masala potato filling, chutneys, peanuts, and sev make it a perfect party snack, which is quick to assemble, and bursting with street-style flavour.
2 cups boiled mashed potatoes 2 tbsp Dabeli masala 2 tbsp oil 1/2 cup tamarind chutney 1/4 cup roasted peanuts 2 tbsp pomegranate seeds Salt to taste 6 pav buns 2 tbsp butter 1/2 cup garlic chutney 1/2 cup tamarind chutney 1 cup nylon sev 2 tbsp finely chopped onions 2 tbsp coriander
In a pan, heat oil, add the mashed potatoes, dabeli masala, salt, and some tamarind chutney. Mix everything well until it gets smooth and fragrant.
Add some roasted peanuts and pomegranate seeds for a crunchy taste. Combine everything gently so the filling remains moist but chunky.
Cut the pavs horizontally. Spread the garlic chutney and tamarind chutney on both sides to make a sweet-spicy layer inside the buns.
Add a generous amount of prepared potato mixture into every pav. Press lightly so everything is combined perfectly.
On a tawa, heat some butter and toast stuffed pavs until they turn golden and crisp from the outside while remaining soft from the inside.
Roll the sides of the dabeli with nylon sev, garnish with some onions and coriander, and serve warm for the full street-style vibes.
