A tangy, spicy Indian pickle that combines crunchy cauliflower and sweet carrots with aromatic mustard seeds and garlic. Perfect to add a punch of flavour to meals.
1 cup cauliflower florets 1 cup grated carrot 2 tbsp mustard seeds 5-6 crushed garlic cloves 1 tsp turmeric powder 1-2 tsp red chilli powder Salt to taste 3 tbsp mustard oil 2 tbsp lemon juice
Blanch cauliflower florets in boiling water for 2-3 minutes, then drain and cool.
Heat mustard oil until smoking, then reduce the flame, add mustard seeds and garlic, and sauté until fragrant.
Add cauliflower, carrot, turmeric, chilli powder, salt and cook for 5-7 mins.
Let it cool slightly and mix in lemon juice.
Store in a jar for 1-2 days to enhance the flavours, then serve with paratha or rice.
