Gluten-free pasta does not mean it has to be sticky, bland, or delicate. With the right mix of flour and gentle cooking, it is easy to make gluten-free pasta at home that holds sauce and tastes comforting in every bite.

Ingredients

1 cup rice flour ½ cup tapioca flour 1 tbsp psyllium husk powder ½ tsp salt 1 tbsp olive oil ¾ cup warm water Extra rice flour, for dusting

Step 1

Mix rice flour, tapioca flour, psyllium husk, and salt in a bowl. Mix everything so that the binding agents are distributed evenly.

Step 2

Add olive oil and warm water to this. Mix it and knead to make a soft, slightly stretchy dough.

Step 3

Cover the dough and let it rest for 10 minutes. It will absorb moisture and improve the structure, and will prevent cracks while rolling.

Step 4

Dust the surface with rice flour. Roll the dough evenly and not too thin. Cut the dough into desired pasta shapes using a knife or pizza cutter.

Step 5

In a vessel, boil water with a pinch of salt in it. Add the pasta and cook for about 3 to 4 minutes. Stir in between to prevent it from sticking or breaking.

Step 6

Drain pasta and toss it with warm sauce immediately and serve warm.
