Ingredients

3 cups of all-purpose flour 2 large eggs 1 tablespoon of olive oil ½ teaspoon of salt Water, as needed

Step 1

Place the flour in a heap on a spotless surface. Make a well in the middle and pour in the eggs, salt, and olive oil.

Stir the flour into the eggs carefully with a fork. Knead until smooth and elastic for 8 to 10 minutes.

Rest the dough for half an hour after wrapping it in a cloth or cling film.

Split the dough in half. Roll each portion thinly using a rolling pin.

Dust lightly with flour to prevent sticking on surfaces. Like a log, roll the sheet loosely.

Cut into strips that are about 1 and 1.5 cm wide. Dust the noodles with flour as you separate them.

Boil a big pot of salted water. Cook the flat noodles for two to three minutes until they are soft.
