Egg biryani is a delicious dish with combines flavours of Indian spices, perfectly cooked basmati rice and boiled eggs. It is known for its simplicity and is a perfect meal for festive occasions, family dinners and is best served with raita or a refreshing salad.
2 cups basmati rice 4 cups water 1 bay leaf 4-5 cloves 2 green cardamoms 1 small cinnamon stick Salt to taste For the Masala: 4 boiled eggs (slightly slit) 3 tablespoons oil or ghee 1 thinly sliced onion 1 finely chopped tomato 1 tbsp ginger-garlic paste 2-3 slit green chillies 1/2 cup plain yoghurt 1 tsp red chilli powder 1/2 tsp turmeric powder 1 tsp garam masala Salt to taste For Garnishing: 2 tbsp chopped mint leaves A few strands of saffron soaked in 2 tbsp milk
Boil the rice with whole spices until 90% done and set aside.
Fry the eggs, sauté the onions, add the ginger-garlic paste, tomato, yoghurt, and spices.
Layer the rice and masala, garnish with mint, coriander, and saffron, and cook on low heat for 15 minutes.
Serve the hot and delicious rice with raita.
