A comforting mix veg curry is an ideal everyday meal that is full of colour and bursting with flavours. This easy recipe uses simple vegetables, a blend of aromatic spices and a creamy gravy, which gives you a delicious dhaba-style sabzi in minutes.
1 cup chopped carrots 1 cup chopped beans 1 cup cauliflower florets 1 cup green peas 1 chopped onion 2 chopped tomatoes 1 tbsp ginger-garlic paste ½ cup curd 1 tsp turmeric 1 tsp red chilli powder 1 tsp garam masala 2 tbsp oil Salt to taste
In a pan, heat oil and sauté onions until golden, then add ginger-garlic paste to it. Cook until it turns aromatic.
Add some chopped tomatoes, turmeric, chilli powder and salt to make the base. Cook until the tomatoes turn soft and make a rich, thick masala.
Lower the flame and mix the curd slowly into the masala to make a creamy gravy.
Add the chopped carrots, beans, cauliflower and peas to this base. Mix everything well so that every vegetable is covered in masala.
Cover and cook on low flame for about 12–15 minutes until the vegetables turn soft but not mushy.
Sprinkle some garam masala from the top, mix it gently and cook for a minute. Garnish with coriander leaves and serve hot with rotis, parathas or steamed rice.
