Drumstick sabji, or drumstick curry, is a South Indian dish filled with flavour and nutrition. It is filled with a blend of aromatic spices and is made with tender drumsticks. This healthy recipe is a great way to round off any meal, as not only is it tasty, but it is also good for you.
4-5 drumsticks 2 medium-sized tomatoes - finely chopped 1 onion - finely chopped 2-3 garlic cloves - minced 1-inch ginger - grated 2 green chillies - slit 1 teaspoon - mustard seeds 1 teaspoon - cumin seeds 1/2 teaspoon - turmeric powder 1 teaspoon - red chilli powder 1 teaspoon - coriander powder 1/2 teaspoon - garam masala Salt to taste 2 tablespoons - cooking oil Fresh coriander leaves - or garnish 1 cup - water
Wash and cut drumsticks into 2-3 inch pieces, then chop onions and tomatoes.
Heat oil, splutter mustard, and cumin seeds, and saute garlic, ginger, and green chillies.
Now, add onions and cook until golden. Add tomatoes and spices, including turmeric, chilli, coriander, and salt. Cook until they turn mushy.
Add drumsticks, pour water, cover, and simmer until tender.
Serve by sprinkling garam masala, garnish with coriander, and serve hot with rice or roti.
