Dhokla is the Gujarati staple that has to be one of everyone’s favourite snacks. But if you don’t have a steamer, you can whip up dhokla in a pressure cooker. Here’s a step-guide you can follow.
For The Batter: 1.5 cups besan 3/4 cup water 1/2 tsp salt 1/4 tsp sugar 1/4 tsp turmeric powder 1 tsp baking soda 1 tsp oil For The Tadka: 2 tsp oil 1/2 tbsp mustard seeds 3-4 green chillies 12-14 curry leaves 1 cup water 1/2 tsp salt 4-5 tsp sugar Juice of 1/2 lemon
Whisk besan, water, salt, sugar, and turmeric powder till smooth. Let it rest for 10 minutes.
Add 1 cup water to the cooker. Place a metal stand in the cooker to elevate the surface.
Add baking soda to the batter. Pour the batter into a greased tray and place it in the cooker.
Close the lid without the whistle and steam for about 15 minutes.
Heat some oil, add mustard seeds, curry leaves, and chopped green chillies, and saute them.
Pour some water and add salt, sugar, and lemon juice. Let the tadka simmer.
Cut the cooked dhokla into pieces and pour the tadka, coating all the pieces and serve.
