Be it homesickness or digestive distress, a bowl of khichdi is the perfect cure. Made with basic ingredients like rice, dal, and the go-to spices, this one-pot meal is ready in under 20 minutes. Serve with dahi and salad for a balanced meal.
1 cup split moong dal 1 cup rice 3 tablespoons ghee 1/2 teaspoon cumin seeds 1/2 teaspoon mustard seeds 1/4 teaspoon hing 1 tablespoon ginger 1/2 tablespoon garlic 1/2 teaspoon turmeric 1 teaspoon black peppercorns Salt to taste 2.5 cups water Coriander leaves (for garnish)
Rinse and soak moong dal and rice for about 30 minutes.
Heat the ghee and prepare the tadka by adding cumin seeds, mustard seeds, and hing.
Add grated ginger, minced garlic, turmeric, and black peppercorns, and saute.
Add the tadka with the soaked rice and dal to a pressure cooker. Season with salt.
Pour in the water, close the lid, and cook for 4-5 whistles over medium heat.
Garnish with chopped coriander leaves and some ghee, and serve with papad and dahi.
