A traditional Karnataka treat, kobbari mithai is typically prepared in Kannada homes for all festivals and significant occasions. South Indian kitchens are usually stocked with coconut and jaggery, and this dessert is proof of how well these two timeless ingredients go together. Here’s a quick, easy-to-follow recipe you can use for making this at home.
2 cups of grated coconut ½ cup of almonds 1 cup of finely chopped jaggery 3 - 4 teaspoons of cardamom powder ¼ teaspoon of ghee 2 tablespoons of almond slivers as a garnish
Ground almonds into a smooth paste. Grind the freshly grated coconut separately.
Use ghee to grease a square tray.
Put the chopped jaggery, coconut, and almond paste in a pan with a thick bottom.
Stir constantly, for 15 to 20 minutes, or until it comes together and forms a soft lump.
Stir in the cardamom powder once the mixture is dry and thick. Move it quickly to the greased tray.
Use your palm or a spatula coated with ghee to flatten it evenly. Cut into squares or diamonds, top with almond slivers.
Let it cool for 2 hours before serving.
