Does your stomach start to growl after a couple of hours of having lunch? Don’t give into your cravings by digging into a bag of chips. Make this chatpata quinoa salad for a gluten-free yet tasty snack.
1 cup quinoa, rinsed 2 cups water 1 cup cucumber, diced 1/2 red onion, thinly sliced 1/2 cup cherry tomatoes, halved 1/4 cup chopped fresh mint 1/4 cup chopped fresh cilantro 1/4 cup olive oil 2 tablespoons lemon juice 1 tablespoon vinegar 1/2 teaspoon honey Salt and pepper to taste
Mix quinoa with water and salt, and boil the mixture. Let it simmer till the water is absorbed.
Combine cooked quinoa, chopped cucumber, onion, tomatoes, mint, and cilantro.
In another bowl, whisk olive oil, lemon juice, vinegar, honey, salt, and pepper.
Pour the dressing over the salad and toss till everything is well mixed.
Refrigerate and enjoy a chilled and healthy salad.
