Champakali is a traditional Marathi delicacy that is quick to prepare and deliciously crunchy! Making it at home during summer festivals is a lot of fun.
1 cup maida or all-purpose flour Salt to taste 1 tbsp ghee ¼ cup water Powdered sugar Oil, as needed
Place maida in a plate with a pinch of salt and ghee. Combine all ingredients thoroughly. The mixture should crumble.
Add a little water at a time and knead the thick dough. Transfer the dough to a basin and cover. Rest for 30 minutes.
Take the dough and knead again. Make it softer. Make little dough balls and smooth them out. Roll it into a round disc-shaped puri.
Using a knife or cutter, cut it vertically. Leave some space around the edges. Roll and press the edges. As you roll up the champakali, it forms lovely layers.
Heat the oil over medium heat. Drop the champakali into hot oil and cook on medium heat only.
Fry until champakali turns a lovely golden colour on both sides. Drain the excess oil and place it in a dish.
Make sugar syrup with 1 cup of water and 1 cup of sugar. Soak them for 5 minutes. Sprinkle powdered sugar and serve!
