Traditional preparation of doi maach requires minimal cooking and minimal preparation time, making it a great addition to quick-dinner recipes.
400g rohu fish pieces 1 onion, sliced 6 garlic cloves ½ inch ginger 1-inch cinnamon stick 2 cardamom pods 5 cloves 1 tsp cumin seeds 1 tbsp Kashmiri red chilli powder 1 tbsp turmeric powder 2 tbsp raisins 1 cup dahi ½ tsp sugar 3 tbsp mustard oil 2 green chillies Salt, to taste
Heat oil in a heavy-bottomed skillet. Sauté garlic, ginger, and onion for 1 minute.
Allow it to cool before blending it into a paste with a mixer grinder.
In a mixing basin, marinate the fish with raisins, turmeric, red chilli powder, salt, and oil for 15 to 30 minutes. Mix everything well.
Heat oil in the same pan used to sauté the onion. Add cumin seeds and let them splutter.
Sauté for a few seconds with cinnamon, clove, and green cardamom. Reduce the flame.
Add the marinated fish and curd to the pan. Cook for around 10 minutes on a medium flame.
After 10 minutes, add the green chillies, sugar and stir. Cook for another 4 to 5 minutes. Serve with steamed rice!
