Brighten up your day with this creamy and tangy beetroot raita. A quick and delicious side dish, packed with earthy beetroot, cooling yoghurt and a tinge of spice.
1 boiled & chopped beetroot 1 cup plain yogurt ¼ tsp cumin powder 1 green chilli, finely chopped ½ tsp mustard seeds 6 curry leaves 1 tsp oil Salt to taste Fresh coriander leaves for garnish
Grate a fresh beetroot or boil it until soft, chop it finely and let it cool.
Whisk the yoghurt until it turns smooth. Mix it well after adding prepared beetroot, cumin powder, green chilli, and salt.
Heat oil, splutter mustard, add curry leaves and pour it over the raita.
Sprinkle fresh coriander leaves and let it cool.
Serve chilled as a side dish with rice or paratha.
