Aloo bhujia is one of the favourite snacks of many people. It is tasty, lightly spiced, and very crunchy, which makes it the perfect evening snack!
2 cups of boiled potatoes, mashed 1 cup of besan or gram flour 2 tbsp of rice flour 1 tsp of red chilli powder ½ tsp of turmeric powder ⅛ tsp asafoetida 1 tsp salt ½ tsp carom seeds Oil, as needed ½ tsp chaat masala ½ tsp coriander powder
Peel and boil 2 cups of potatoes till tender. Make sure there are no lumps when you mash them gently.
Add gram flour, rice flour, salt, red chilli powder, turmeric, carom seeds, and asafoetida. Add oil and knead.
Fill a deep pan with enough oil to deep fry. Heat on medium until a tiny piece of dough instantly rises and sizzles.
Pour the dough into a piping bag with a fine nozzle or a sev maker. Thin strands of dough should be pressed straight into the heated oil.
Stirring occasionally, fry the bhujia over medium heat until it is crisp and brown.
Steer clear of intense heat, or it may turn brown on the outside but stay tender inside.
Remove with a slotted spoon, then drain the oil on paper towels. For added taste, add chaat masala. Serve right away or store in an airtight container.
