A wholesome, protein-rich paneer salad can be ready in no time—making it ideal to enjoy as a quick meal on working days or as a light supper. While the recipe uses paneer cubes in their natural form, the protein can also be grilled for better flavour and texture.
200 grams of pan-fried paneer ½ cup of Greek yoghurt or hung curd 6-8 cashew nuts 1 clove of garlic 1 teaspoon of Kashmiri red chilli powder ½ teaspoon of Italian herbs or oregano ½ teaspoon of cumin powder ½ teaspoon of red chilli flakes
1 tablespoon of lemon juice 1 tablespoon of maple syrup 1 cup of chopped lettuce, optional 1 cup of chopped onions ½ cup of diced cucumbers ½ cup of diced tomatoes ½ cup of diced bell peppers Salt to taste
In a blender, assemble the cashews, yoghurt, garlic clove, Kashmiri red chilli powder, oregano, red chilli flakes, cumin powder, salt, lemon juice and maple syrup.
Blend the mixture into a smooth puree. Set it aside.
In a pan, heat oil on medium flame. Add the paneer cubes, garlic powder, salt and pepper. Sauté for 3-5 minutes.
In a bowl, add the paneer cubes, cucumbers, tomatoes, bell peppers, chilli flakes, lettuce and onions.
Add the dressing that you had set aside earlier. Toss the paneer and the veggies very gently until they are coated in the dressing.
Serve paneer salad right away. If you want to have it chilled, you can also refrigerate it.
