Chocolate loaf ice cream cake is the perfect recipe for a hot sunny day. This cake is rich and creamy made to satisfy your sweet cravings. It is simple and can be made instantly. Here is how to make this ice cream cake:
170g softened butter ¾ cup caster sugar 3 eggs 175g self-raising flour ½ tsp baking powder 1 tsp vanilla extract 50g cocoa powder 50g dark chocolate chunks 1 cup heavy cream ⅓ cup condensed milk ¼ tsp vanilla bean paste 200g cups melted chocolate 1 tsp coconut oil
Heat the oven to 160C/ 350F.
Line a loaf tin with baking paper, leaving the ends hanging over.
Cream together the butter, sugar and vanilla extract with a standing mixer until pale.
Then add the eggs and beat on medium speed for a couple of minutes.
Fold in the flour, baking powder and cocoa. Add the chocolate chunks and combine.
Scrape the batter into the tin and bake for 45-55 minutes, Leave to cool.
Make your ice cream by whisking cream with condensed milk and vanilla paste.
Cut the loaf in half from the middle. Place the bottom half back in the tin.
Pour the ice cream on top of it and then place the other half.
Cover it with the rest of the ice cream.
Freeze for a minimum of 5 hours.
Remove from the freezer and flip, drizzle with chocolate and then slice it up!
