This classic American breakfast is all about assembling British Muffins, Canadian bacon, a poached egg, and creamy hollandaise sauce. Known for a perfect balance of flavors and textures, Eggs Benedict is often enjoyed as a perfect weekend breakfast.
For the poached egg and bacon 2 English muffins 1 large egg 4 slices Canadian bacon A splash of vinegar
For the Hollandaise sauce 4 Tablespoons unsalted butter 4 egg yolks 2 teaspoons lemon juice 1 Tablespoon whipping cream salt and pepper to taste
Melt the butter in a small saucepan. In another bowl, beat the egg yolks and mix lemon juice, whipping cream, melted butter, and salt and pepper. Repeat it.
Pour the mixture back into the saucepan. Cook on low heat, stirring constantly, for just 20-30 seconds. Remove from the heat once the sauce is ready.
In a pot, add 3 inches of water and bring it to a simmer. Add a splash of vinegar when bubbles are visible.
Crack one egg into a cup and place the egg into the simmering water. Cook for 3-5 minutes and remove the poached egg with a slotted spoon.
Cook the Canadian bacon in a large pan over a medium-high heat for about 1 minute on each side.
Toast the English muffins and top them with Canadian bacon and the poached egg.
Pour the hollandaise sauce on top and serve.
