Who doesn't like switching meals from time to time? However, with work and chores, it becomes difficult to maintain a properly balanced diet that includes all the essential nutrients. The search for the perfect meal is now over. Here is an exciting burrito bowl recipe that one can try making at home.
1 tablespoon of olive oil ½ cup of red bell peppers ½ cup of chopped sweet onions 500 grams of cubed tofu 500 grams of your choice of meat ½ cup of salsa sauce 400 grams of semi-boiled black beans ½ cup of diced tomatoes 2 green chillies 1 cup of jasmine rice 1 tablespoon of taco seasonings ½ teaspoon of chilli powder 2 cups of stock of your choice 1 cup of cheddar cheese, shredded Salt and pepper to taste
In a large pan, heat the olive oil. Sauté onions and red bell peppers. Add salt and pepper as needed.
Add in the cooked jasmine rice, black beans, corn, tomatoes, green chiles, salsa, taco spice and chilli powder.
After adding the stock, bring it to a gentle boil. Turn the heat down to low and cover the pan. Cook until the rice is thoroughly done.
To taste, stir and season. If desired, add cheese. Cover the pot with the lid and let it rest for 5 minutes for the cheese to melt.
Transfer to bowls and garnish with your preferred toppings. You can eat it with tortilla chips and serve it over lettuce in a salad bowl!
