This high-protein quinoa salad is fresh, filling, and colourful, with vegetables, herbs, and a bright lemon dressing. It’s a perfect everyday lunchbox option or a quick dinner on light days.
1 cup cooked quinoa ½ cup chopped cucumber and tomatoes 2 tbsp boiled chickpeas or sprouts 1 tbsp lemon juice 1 tbsp olive oil Salt, pepper, and herbs to taste
Combine cooked quinoa, cucumber, tomatoes, and chickpeas in a bowl.
Add lemon juice, olive oil, salt, and pepper.
Toss everything gently until the grains are coated and the vegetables look glossy.
Add herbs of your choice and serve immediately as a light, high-protein meal.
