How To Make A Fibre-Rich Bowl Of Mushroom Soup For Dinner

Mushrooms are rich in fibre, protein and antioxidants and are low in calories, which make it a perfect food for a weight loss diet. This bowl of creamy mushroom soup is perfect!

Ingredients

2-3 cups of water Peppercorn A few bay leaves 1 carrot, roughly chopped 1 celery 1 onion, roughly chopped Half a garlic Salt to taste Mushroom stems A dollop of butter Garlic cloves, crushed 1 tsp chilli flakes Mushrooms, chopped Basil leaves Flour, as needed Milk, as needed Cream, as needed

Step 1

In a pan, add water, peppercorn and tear in the bay leaves. Then add the roughly chopped carrots to the stock.

Step 2

Take a rolling pin and run it through the celery till you get the crackling sound, oozing out the paste.

Step 3

Add the celery and roughly chopped onions. Add the half-cut garlic to the stock. Add the mushroom stems to the stock. Add salt.

Step 4

Once the stock comes to a boil, put it on a simmer for about 20 minutes. Strain the stock in a bowl using a strainer. Pour the stock back into the pan

Step 5

In a pan, add a dollop of butter. Add crushed garlic cloves, chilli flakes and saute. Add mushrooms, freshly ground pepper and tear in the basil leaves.

Step 6

Add a little bit of butter and sprinkle the flour over them. Add milk to the stock and give it a nice stir, and then let it cook for about 3-4 minutes.

Step 7

Add the cream to the soup, and then start blending everything. Add butter and cream. Blend and serve, warm.
