Adulteration scare is real, and one of the most used ingredients in Indian kitchens is ghee. If you’re getting ghee from the market, don’t just trust the brand, but test the purity yourself with this guide.
Pure ghee should have a pale golden colour. The darker tones might indicate adulteration.
Typically, ghee has a pleasant and nutty fragrance. If you’re getting a rancid smell, avoid using it.
If you refrigerate pure ghee, it should be transparent without any opaque areas.
Pure ghee has a rich and buttery taste. If it tastes bitter, chances are that it is impure.
Unlike butter, pure ghee has a higher melting point and should thus maintain its shape for a longer time.
To test the purity, you can heat some ghee, and if it starts to smoke or burn at a low temperature, it might be impure.
